Howdy from northeast Oklahoma, USA and welcome to the Clays' Water Buffalo web page. Our Water Buffaloes are of the River type as opposed to the Swamp type. Some of them are of the Buffalypso breed which was developed through a selective breeding program by veterinarian Steve Bennett in Trinidad. Buffalypso were bred from the following riverine breeds of the Indian sub-continent: Murrah, Jafarabadi, Nili-Ravi, Surti, and Nagpuri. They are docile domesticated livestock that are useful for milk, meat, and draft.
Here in the United States the dairy product for which Water Buffalo are best known for is Mozzarella di Bufala (also known as Buffalo Mozzarella), which currently sells for about $15 to $20 per pound. Authentic Mozzarella is made from 100% Water Buffalo milk and is far superior to Mozzarella made from "regular" cow's milk.
